I made a batch of these tonight and once again am reminded what a great recipe this is, so thought I'd share it!
1 cup dark brown sugar
2 Tablespoons soft margarine
1/2 cup oil
1 large egg
1 1/2 cups flour
1 1/2 cups regular oats (quick oats work too)
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt ( I omit)
1/2 cup raisins
1/2 cup roughly chunked walnuts
1 1/2 teaspoons vanilla extract
Beat sugar & butter well, add oil & egg. Mix all. Using 3 level Tbl. of batter per cookie drop 2" apart onto baking sheets sprayed with cooking spray.( I use foil lined baking sheets and spray them with cooking oil). Flatten slightly. Bake 350 degrees for 10 to 15 minutes. Remove from pans; cool on racks.
