My hubby & I were able to get 1/2 of a bushel of beets to can and we worked side by side for several hours. Our grand result was 11 quarts of beets. This was the first time we ever attempted to can beets and it went really well. A special thanks to his sister who coached us through it, and supplied the family recipe.

The canning jars are ready and waiting for the beets to get done cooking.


Here are our finished jars of pickled beets. Aren't they pretty! The recipe was my husband's Aunts and oh so good.

"Seek the LORD and his strength: seek his face evermore." Psalm 105:4~~~ Its raining here....and I'm off to practice my cello. Its a good night to stay inside and enjoy the coziness of home.

I love, love, LOVE pickled beets, and never found another person who DID until I moved back home and found that my niece and her son are both mad about them.
Those jars full look pretty enough.......I think I'd tie pretty fabric bows around them and display them in the kitchen !

It finally rained here too !
I prayed for it while I was driving, and in a couple of minutes I got nice FAT dollops on the windshield ! Then I tried to ask an old man if he needed a ride when I saw him walking in it and he practically ran away from me, leaving my jeep passenger window stuck down and rain pouring in all over the seat ! Ha ! (The window insists that you open the door, and then it'll roll up as pretty as you please........not an easy task for a lone driver !)
Still, I'd rather have a slightly wet seat, (and a very wet senior citizen running away) than no rain at all !
Now, lookie there,...... I think my comment might have just been longer than your post....too bad I can't post pictures here too !

Your beets will be a treat this winter. I pulled one up from the garden, wiped off the dirt on my apron .. and munched away .. it was so good raw. I like your metal canning funnel ... mine is plastic and I'd prefer a metal one. Maybe my mom has my grandmother's funnel ... worth asking. Hope you are enjoying your summer ... I am :)

I love pickled beets! You inspire me, but I would have to buy the beets as we do not have any garden to speak of. But I have spotted loads and loads of blackberry bushes and elderberry trees so these I will be collecting from God's bounty and store up for the winter.
Lovely that you did the happy task together :0)

Oh your beets are so bountiful and pretty. I have an old sign in my kitchen and guess what it says?
"Beets"!
