Back in the kitchen again!! Son is going to a picnic this afternoon and these are what he made to take, along with his assistent....yours truly. He calls it 'family time'.... =). This really is a special recipe. You buy a roll of refrigerated sugar cookies and after you slice them into a 1/4 thick circle, you cut that in 4 equal sections. Bake on a lightly greased cookie sheet (350 degrees) about...oh, 7? minutes (till lightly browned on bottom) and place a large marshmallow-cut in half (sticky side down)...on top of the cookie and put in back in to bake another 2? minutes....till the marshmallow just starts to puff up. Once out of the oven and cooled you ice it with your favorite frosting and roll in coconut. There you have it, a delicious treat that everyone is impressed with and best of all...its oh so tasty! Does anyone already have this recipe? My Mother passed this along to us, it was one of her 'prize' Christmas recipes. Its a good one. It looks good at Christmas with white coconut and a bit of red & green candied cherry bits on top to look like a berry & leaf.
